Try this delicious new take on a healthy Mediterranean classic. Grilling the veggies brings out their juicy natural sweetness.
4 mini bell peppers
1 thickly sliced red onion
10 cherry tomatoes on the vine
2 baby cucumbers
8 assorted olives
1 oz (30 g) feta cheese, crumbled
3 tbsp (45 mL) olive oil
2 tbsp (30 mL) lemon juice
2 tbsp (30 mL) minced fresh oregano
1 clove garlic, minced
Pinch salt and pepper to taste
1. For vinaigrette, in a bowl, whisk oil in a thin stream with juice, oregano, garlic, salt and pepper until emulsified.
2. Lightly brush peppers, onion and tomatoes with vinaigrette. Grill on greased grill over medium heat, turning once, about 15 to 20 minutes for peppers and onions and about 5 minutes for tomatoes, until softened.
3. Run a peeler lengthwise across cucumbers to make ribbons.
4. Arrange cucumber on plates with grilled veg, olives, feta and oregano leaves. Drizzle with remaining vinaigrette.
